Muffins are a very simple yet delicious treat that is perfect for any occasion. The preparation of the treat is quite simple and quick, so you can bake muffins in time for the unplanned arrival of guests. Muffin dough is most often prepared with wheat flour; eggs, butter and sugar are also added to it (for sweet muffins). Many recipes use milk, as well as additional ingredients such as baking powder and vanillin.

Muffins can also be unsweetened, for example, with cheese and ham. For such baking, you can use various seasonings, spices and herbs (the main thing is not to overdo it). Chocolate, cottage cheese and fruit muffins are widespread. Each treat is good in its own way, but the cooking principle remains the same: the dough is kneaded, filled into greased molds and baked in an oven preheated to the desired temperature for 14 to 35 minutes. Various fillings are added to the dough: pieces of fruit, nuts, chocolate pieces, marmalade, dried fruits, etc.

Muffins - preparing food and utensils

To prepare muffins you need to prepare: 1 or 2 bowls for mixing the ingredients (depending on the recipe) and baking molds. You can use aluminum or silicone molds (in the latter case there is no need to grease them with oil). You can put a ribbed paper insert into the mold for baking cupcakes. Kitchen utensils you will also need are a measuring cup, a grater, a whisk or spoon, and a bowl for melting the chocolate and butter.

The butter must be removed from the refrigerator, it is advisable to sift the flour. The milk should be warm enough. Measure out the required amount of bulk products (sugar, baking powder, salt, etc.) in advance. Prepare the fillings: wash and chop the raisins and fresh berries if necessary, chop the nuts with a knife.

Recipe 1: Chocolate muffins (option 1)

Chocolate muffins are a great treat for any occasion. These delicious cupcakes can be baked on a regular day to delight your family and guests. If a large event is planned, you need to take twice as many of these ingredients.

Required ingredients:

  • 215 g wheat flour;
  • 75 g sugar;
  • A bar of natural dark chocolate;
  • 28 g cocoa;
  • 3 eggs;
  • 150 g butter;
  • 2 tsp. baking powder;
  • 1 tsp. vanillin;
  • Half a cup of raisins (seedless).

Cooking method:

Remove the butter from the refrigerator until it softens and reaches room temperature. Place in a bowl, grind with sugar and cocoa, beat in the eggs and mix. The chocolate should also be slightly softened. Break the tiles and put them in a bowl, mix all the ingredients. Next, add flour, vanillin and baking powder, knead the dough. Wash the raisins, dry them, roll them in flour and place them in the muffin dough, stir. Fill the pastry molds with dough, but not to the top. Bake in the oven at 180-200 degrees for about 24-25 minutes. The treat can be coated with powdered sugar or spread with icing.

Recipe 2: Chocolate muffins (option 2) “in a hurry”

These muffins don’t require too many ingredients, so the recipe will come in handy if guests are expected to suddenly arrive in an hour or an hour and a half. The cupcakes are very simple to prepare, but they turn out very tasty.

Required ingredients:

  • 4 tbsp. l. cocoa;
  • Half a glass of sugar;
  • 3 chicken eggs;
  • Half a glass of milk;
  • 180 g margarine;
  • 2 cups of flour;
  • Half tsp. soda

Cooking method:

Add sugar, cocoa to margarine and mix with milk. Stir vigorously, then bring to a boil and cool. Break the eggs into the mixture and beat well. Add soda to the flour and knead the dough until smooth. Recipe 3: Chocolate muffins (option 3) with a surprise

Chocolate muffins according to this recipe are very simple to prepare, but children really like them. Each cupcake contains a little surprise - liquid chocolate. An excellent treat for children and their parents.

Required ingredients:

  • Butter - 100 g;
  • Sugar - 105 g;
  • 2 eggs;
  • Flour - 175-180 g;
  • Baking powder - 2 tsp;
  • Cocoa - 2 tbsp. l.;
  • Slices of milk, dark or white chocolate (you can use different ones).

Cooking method:

Grind the butter with sugar and eggs, stir thoroughly. Add cocoa, flour and baking powder. Mix all ingredients thoroughly with a spoon or whisk. Dough that is too dense can be diluted with 20-30 ml of milk. Fill the greased molds halfway with dough, add a slice of chocolate and lay out the rest of the dough. Bake at 190 degrees for about 26-27 minutes. Sprinkle muffins with powdered sugar.

Recipe 4: Curd muffins

From fresh cottage cheese you can make not only cheesecakes, but also very tasty muffins. Curd muffins will appeal to both children and adults.

Required ingredients:

  • 210 g cottage cheese;
  • 210 g each of flour and sugar;
  • Butter - 150 g;
  • 3 eggs;
  • Baking powder - 1 tsp.

Cooking method:

Heat the oil until soft. Mix eggs with sugar, add soft butter and mix. Next you need to add cottage cheese and baking powder. Without ceasing to stir, add wheat flour. Stir the dough well.   • 380 g flour;
  • 1 egg;
  • 280 g cherries;
  • Milk - 220-230 ml;
  • 7-7.5 g salt;
  • 25 g vanillin;
  • Baking powder - 10-12 g;
  • 160-170 g sugar;
  • 75-80 g butter.

Cooking method:

Mix flour with sugar, vanillin, baking powder and salt. In a second container, mix the cooled ghee, eggs and milk. Mix the contents of the bowls and mix well with a spoon. Fill the dough with pitted cherries, cut into several pieces. Bake until done in a preheated oven.

Recipe 6: Banana Muffins

Banana muffins are very aromatic, appetizing and tasty. All you need to make these cupcakes is flour, egg, bananas and 2 types of sugar.

Required ingredients:

  • Flour - 2.5 cups;
  • Sugar - 0.7 cups;
  • Eggs - 2 pcs.;

  • 130-150 g cheese;
  • A glass of flour;
  • 190 ml milk;
  • 40-50 g butter;
  • 1 egg;
  • 1 tsp. baking powder;
  • Quarter tsp. salt;
  • Seasonings: paprika, pepper, dried tomatoes - to taste;
  • A pinch of black sesame.

Cooking method:

Grate the cheese. Add salt, seasonings and baking powder to the flour. Soften the butter and mash with a fork. Beat the egg into the butter and stir thoroughly. Then add flour and milk. Mix the ingredients with a spoon and add the cheese. Mix the ingredients until smooth. Place the dough into greased molds (not all the way to the top). Sprinkle with black sesame seeds. Bake cheese muffins at 180-200 degrees for 22-24 minutes.

Recipe 10: Muffins with cottage cheese

Required ingredients:

  • 200 g flour;
  • 1 egg;
  • Sugar - 100 g;
  • Chocolate - 80 g;
  • Baking powder - 2 tsp;
  • Butter - 42-45 g;
  • Milk - 215 g (2.6%);
  • Candied cherry – 115 g.

Cooking method:

Break the chocolate bar into slices and place in a bowl with softened butter, soften the contents in a water bath. Allow the mixture to cool. Mix flour with sugar and baking powder.   • Blueberries - 175-185 g.

Cooking method:

Sift the flour, mix with sugar and baking powder. Combine butter with eggs and milk, mix. Stir the mixture into the flour and sugar. Add blueberries to the batter and spread evenly with a spoon. Grease the baking pans with oil and place the dough. Bake blueberry muffins in an oven preheated to 205-210 degrees for 20 minutes.

Add candied cherries, rolled in flour, and distribute them in the dough with two or three mixing movements.

If you are using metal pans, grease them with butter and lightly flour them. Fill the forms completely with dough. Sprinkle each muffin with sugar and place in the oven preheated to 205C. Bake for 18-20 minutes.

BERRY MUFFINS

Ingredients:

Then pour the “liquid” part into the “dry” part. Stir until all the flour is moistened. This is 15-20 movements with a spoon. Divide the dough into two equal parts. Add blueberries, previously sprinkled with flour, to one, and currants to the second. Also sprinkle it with flour first.

Using two or three mixing movements, distribute the berries in the dough. Grease baking pans with butter and lightly dust with flour. Fill the forms completely with dough. Sprinkle each muffin with sugar and place in the oven preheated to 205C. Bake for 18-20 minutes.

SALTY MUFFINS

Ingredients:
hard Russian cheese – 100 g
bacon – 80 g
dill – 2-3 sprigs
garlic – 1 clove

For the test:
flour – 250 g premium wheat flour
milk – 170 ml (2.6%)
eggs – 2 pcs.
salt – 0.5 teaspoon,
sugar – 0.5 teaspoon,
baking powder - 2 teaspoons,
butter – 70 ml

Cooking method:

Melt the butter. Turn on the oven at 205C. In separate bowls, mix dry and liquid ingredients until completely combined. There is no need to beat anything. Add squeezed garlic and finely chopped dill to the liquid part. Then pour the “liquid” part into the “dry” part. Stir until all the flour is moistened. Add hard cheese cut into small cubes into the dough and lightly mix the dough again to evenly distribute the ingredients.

Fill the molds 70% with dough. Insert the bacon rosette and place the muffins in the oven. Bake for 20-25 minutes at 205°C.

The first recipe is dedicated to chocolate lovers. But these are not simple chocolate muffins: they are elegantly complemented by candied cherries. Cherries generally go very well with chocolate. To prepare delicious muffins according to Lisa Glinskaya’s recipe, you will need to stock up on:

  • dark chocolate - 80 g;
  • premium flour - 200 g;
  • sugar - 100 g;
  • egg - 1 pc.;
  • baking powder - 2 tsp;
  • milk 2.6% fat - 200 ml;
  • butter - 45 g;
  • candied cherries - 100 g.

Recipe:

  1. Prepare a water bath and melt the butter and chocolate in it. Cool to room temperature.
  2. Collect all dry ingredients and mix in one container, liquid ingredients in another. After this, pour the dry mixture into the liquid mixture and combine with a regular spoon in 15-20 movements. The recipe does not recommend using a mixer.
  3. Add the candied fruits last, stirring. If the molds are metal, they must first be oiled and then sprinkled with flour. After this, distribute the dough over them, filling the molds completely. Sprinkle the muffins with sugar and bake for 18-20 minutes. The recipe recommends preheating the oven to 205 degrees.

Berry

Berry pastries are considered one of the most popular. Lisa Glinskaya did not leave her unattended and offered her own version of berry muffins. For them you will need to prepare:

  • blueberries and currants - 100 g each;
  • premium flour - 250 g;
  • milk 2.6% fat -150 ml;
  • sugar - 200 g;
  • egg - 1 pc.;
  • salt - ½ tsp;
  • baking powder - 2 tsp;
  • a quarter of nutmeg;
  • vegetable oil - 100 g.

Any recipe will first recommend washing the berries and then drying them. This one is no exception. Further steps completely repeat the previous recipe: dry and liquid ingredients are mixed separately. Then the liquid ones are added to the dry ones and combined with 15-20 rotational movements with a spoon.

Now the mass should be divided into two halves. The recipe calls for adding currants to the first, and blueberries to the second, after rolling them in flour (this is necessary for even distribution of the berries). A couple more stirring movements and you're done.

After this, you need to put the muffins into molds, filling them completely with dough, sprinkle with sugar and bake at the same temperature (205 degrees) for 18-20 minutes.

Salty

The following pastry is original: it is not traditionally sweet, but salty. These unusual muffins will surely appeal to cheese and bacon lovers. To prepare them, you will need to stock up on:

  • bacon - 80 g;
  • 1 clove of garlic;
  • a couple of sprigs of dill;
  • 100 g of hard cheese (the recipe recommends using Russian);
  • premium flour - 250 g;
  • 2 eggs;
  • milk 2.6% fat - 170 ml;
  • salt and sugar - ½ tsp each. everyone;
  • baking powder - 2 tsp;
  • vegetable oil - 70 ml.

The muffins are prepared as follows:

  1. All the dry ingredients of the recipe are mixed in one bowl, the liquid ones in another. Chopped dill and squeezed garlic are added to the liquid ingredients.
  2. After this, the liquid contents are mixed into the dry mixture. No need to use a mixer.
  3. When the flour is completely moistened, you will need to add cheese, chopped into small cubes. Mix everything well again.
  4. Prepare the molds - grease and dust with flour. Fill the molds with dough and decorate: insert a “rose” made from a slice of bacon into each one.
  5. Bake salted muffins for 20-25 minutes. Set the temperature to 205 degrees.
