Squid meat is not difficult to prepare; it usually comes to our table frozen; it is less common to find fresh, unless you are a happy resident of the sea coast. Usually squid is cooked according to the rules for cooking other sea creatures. In order for the squid meat to remain soft and tender, it must be cooked for no more than 5 minutes in boiling water. The longer you cook the squid, the tougher and rubberier it becomes.

First of all, the squid must be cleaned of film. It can be easily removed if the carcass is first doused with hot water and then cold. Then the skin is removed almost in one piece and almost without effort. If there is a dorsal chord inside, then it must be pulled out. The finished squid carcass goes to an empty bag.

For cooking, it is best to boil salted water in a saucepan and lower the squid there for five minutes. After that, take it out immediately. An alternative to this method is to place the squid in boiling water, but remove the pan from the stove. Cool boiling water will be enough for the squid to cook without active boiling. It is very tender and cooks extremely quickly.

Canned squid is even less hassle. They are ready to eat and properly cooked, so they are always quite soft and tasty.

This squid salad is prepared in just a few minutes. Especially if you use canned squid and there is no need to waste time cooking it. The festive version just needs to be decorated a little and a delicious squid salad will complement the holiday menu.

You will need:

  • squid (boiled or canned) - 300 grams,
  • pickled cucumbers - 2-3 pcs,
  • hard cheese - 150 grams,
  • mayonnaise for dressing,
  • olives, herbs, cucumbers for decoration.

Preparation:

1. Boil the squid in advance and do not forget to cool it as soon as you remove it from the hot water. Prepare the rest of the ingredients.

2. Cut the squid into small strips.

3. Grate the cheese on a coarse grater. Use your favorite type of cheese that you like the taste of.

4. Cut into thin cubes, much like squid. You can also use pickled cucumbers for salad, even pickling your own.

As you can see, salads with squid are easy to prepare. Although I must admit that I have not cooked them before, I thought that processing squid was a difficult task. Imagine my surprise when I first bought and cleaned them. It turns out that everything is very simple. But you still need to know some subtleties.

How to properly cook squid for salad so that it is soft

Squids are healthy because they consist of 20% protein. But it is precisely this quality that presupposes certain features of their preparation. The fact is that during prolonged cooking, the protein coagulates, which makes the squid as hard as rubber and unsuitable for consumption. Therefore, in order to cook soft squid for a salad, you need to adhere to the following rules:

  1. When buying a carcass, choose a white carcass, pay attention to the freshness of the smell. Carcasses should not stick to each other.
  2. Before cooking, you need to clean the squid as thoroughly as possible so that no films remain. Otherwise, hard lumps may form on the surface of the carcasses.
  3. The easiest way to remove membranes from squid is to pour hot water over the carcasses and leave for a few minutes. The film then comes off easily and is removed.

4. Be sure to remove the chitinous cartilaginous chord inside the squid fillet. Simply separate it from the carcass and remove all solid particles with your hands.

5. After cleaning the squid, boil them in salted water. In this case, after boiling, cook for no more than 2 minutes, even better 1.5 minutes. At the same time, do not leave the pan, but strictly monitor the time.

6. When the time is up, immediately remove the squid from the pan and place in a colander.

7. For 1 kg of fresh squid you will need 2 liters of water and 2 tbsp. l. salt.

8. For more flavor when cooking, add 2 tbsp to the pan. l. sugar, bay leaf, black peppercorns and 1 tbsp. l. vinegar.

9. Another reliable way to prepare soft squid for salad is to pour boiling water over them 2-3 times. This method is considered more reliable, since there is no danger of overcooking the squid. This filling is enough to prepare the squid for consumption.

10. If you missed the moment, overcooked the squid for more than 2 minutes and it became tough, don’t despair - you can save it. They will decrease greatly in volume, but after 30 minutes of cooking they will become soft again.

  1. Let's start preparing this dish with the sauce. Separate the chicken whites from the yolks; we only need the yolks. Mix them with mustard, lemon juice, soy sauce, fish seasonings and vegetable oil.

It’s very tasty to add a clove of garlic to salad sauce, then the salad will turn out more piquant.

2. Clean the squid from films and ridges and cut into thin strips. Fry them in a frying pan in vegetable oil, add soy sauce and let it evaporate a little. The total cooking time for squid should not exceed 1.5 minutes.

3. Place lettuce leaves in a deep bowl. You can pick them with your hands arbitrarily, as you like - larger or smaller.

  • red caviar - 100 gr.
  • potatoes - 2-3 pcs.
  • chicken eggs - 3 pcs.
  • hard cheese - 150 gr.
  • slice of cheese for decoration
  • dill - 30 gr.
  • mayonnaise
  1. Boil the potatoes. Let them cool. Grate the potatoes on a coarse grater and place them in the first layer of salad. Potatoes can be slightly salted. A mayonnaise net will go on top of the potatoes.

Less mayonnaise is consumed if it is used to cover layers of salad in the form of a mesh. And it’s convenient to make the mesh using mayonnaise from a bag.

2. Clean the squid from films and boil in salted water for 1.5 - 2 minutes. After they have cooled, cut the squid into strips and lay them in a second layer. We again make a mesh of mayonnaise on top.

3. We also boil the eggs, after they have cooled, we separate the whites from the yolks. The third layer of salad should be grated whites.

4. Grate the cheese on a coarse grater and cover it again with the mayonnaise mesh.

5. Grate the yolks on a fine grater and sprinkle on top of the salad.

6. Now we begin to decorate our salad. We will need 1 or 2 slices of cheese for sandwiches. Using a scalloped roller, cut long carved strips of cheese and place them along the length of the salad to form squares.

And, really, who is this? Neither fish nor fowl. To tell a five-year-old child that this is a cephalopod is to say nothing. At home, we looked at the squid in the picture, and, having learned that it was also edible, my daughter made a categorical conclusion: “I will never eat it!” However, a few years later, a squid salad called “Laguna” became her favorite salad. And since then I became interested in squids and learned a lot of useful information for myself. It turns out that this is an incredibly valuable, dietary and beneficial product for us, which is often called a balm for the heart because of its beneficial effect on this vital organ.

Squid meat is an excellent delicacy that goes well with vegetables, cereals and fish. But most often, this product is known to be used as the main ingredient for salads: boiled as a whole carcass, cut into strips, rings, or added raw to a salad.

The most tedious and tedious procedure is removing the skin from squid, which is why many housewives simply do not want to deal with them.
